Bananas Foster Chia Pudding

Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk or coconut milk I have used both. Almond is lighter, coconut is quite rich.
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • pinch salt
  • 1 banana
  • 1 tsp butter
  • 1/4 cup chopped walnuts or pecans
  • sprinkle cinnamon
  • 1 cup vanilla Greek yogurt

Instructions

  1. Make the chia pudding the night before by combining chia seeds, almond or coconut milk, maple syrup, vanilla and salt in a bowl. Stir well and let sit overnight.

  2. In the jars, layer chia pudding and greek yogurt.

  3. In a pan over medium heat, place butter until melted and slice banana on top. Sprinkle with cinnamon and let sit until they start to brown. Flip and brown the other side.

  4. Top pudding jars with a dollop of Greek yogurt, walnuts and caramelized bananas!
