Fresh, light meal of chicken lettuce wraps with a hoisin sauce made from scratch with way less sugar! Similar to PF Chang's chicken lettuce wraps.
For the lettuce wraps, brown ground chicken/turkey in a frying pan. Once it's halfway cooked start adding the veggies. Start with onion, then add pepper. If using mushrooms, finely chop 4 mushrooms and add with the onion. Cook for a couple more minutes. Once the chicken/turkey is fully cooked, add grated carrots. Add garlic and ginger. Cook another couple of minutes. Lastly, add the water chestnuts and cilantro. Green onion can also be added. Cook for two more minutes.
To make hoisin sauce: Put hot water in a dish and add raisins. Let soak for 10 minutes.
While that's soaking, add the rest of the hoisin ingredients into a magic bullet or blender. Add the water and raisins and blend well.
Add most of the sauce to chicken/turkey mixture. Mix well. Add the rest of the sauce if needed. You don't want too much sauce. You can always add a little to each wrap if desired.
Separate lettuce pieces and scoop mixture into each lettuce cup. Chicken wraps are ready to go. Sprinkle some toasted sesame seeds on top for added flavor and to make the wraps look good!
