  • 1 cup cherry tomatoes
  • 1 cup cooked quinoa
  • 1 small tin chick peas, rinsed
  • 1/4 cup chopped dates
  • 1/4 cup olive oil
  • 1/2 lemon juiced
  • 1 tbsp dijon or grainy mustard
  • 1 tsp honey or maple syrup
  • salt and pepper to taste
