Chocolate Chip Peanut Butter Protein Cookies

Ingredients

  • 1/2 cup chocolate protein powder I use Gold Standard Isolate
  • 3 tbsp large flake oats
  • 1 tbsp cacao powder
  • 1/4 cup all natural peanut butter I used 1/8 almond butter, 1/8 peanut butter as that's what I had on hand.
  • 2 tbsp maple syrup
  • 2 tbsp unsweetened almond milk If leaving these raw and not cooking, start with 1 tbsp of liquid and see if you need the other one.
  • 1 tsp vanilla
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/8 cup mini dark chocolate chips or chopped dark chocolate

Instructions

  1. Preheat oven to 325F.

  2. Mix together dry ingredients.

  3. Add all wet ingredients and gently stir until just combined.

  4. Fold in chocolate.

  5. On a parchment lined cookie sheet, shape dough into 5 cookies.

  6. Bake for 12-14 minutes. Cool on rack and store in sealed container or in the freezer.
