Chocolate Mint Protein Balls

A mint and chocolate on-the-go treat

Ingredients

  • 1 1/4 cup pitted dates soak for 5-10 minutes in hot water to soften. Reserve a few tbps if mixture seems too dry
  • 1/4 cup all natural peanut butter I used crunchy
  • 3/4 cup large flake oats I pulsed mine a few times for a smaller size
  • 3 tbsp mini chocolate chips
  • 1 tbsp ground flax seed
  • 1/8 tsp kosher salt
  • 1 tbps cacao powder
  • 1/3 cup chocolate mint protein powder I use Legion Athletics Mint Chocolate
  • 1 tsp vanilla If using regular chocolate protein powder, add 1 tsp peppermint extract instead
  • 1 tbsp reserved water from soaking the dates

Instructions

  1. Place dates in blender or magic bullet and pulse until dates start to break into small bits. Add peanut butter and pulse to blend. Scrape down and add remaining ingredients except chocolate chips. Blend together. At this point the dough will look like crumbs, but when you put some in your hand and press together, it should stick together well. Depending on the moisture of your dates, you may want to add a bit more peanut butter or water if it's too dry and add more oats if it's too wet. Work the chocolate chips in with your hands.

  2. Use a small scoop to make a ball about 1 and 1/2 inches in diameter and form with your hands. You should get 14 balls, unless you're tasting along the way. :) Place on parchment paper and enjoy right away or put in the fridge or freezer to firm for later.
