A sweet chocolatey, peanut butter on-the-go treat
Place dates in blender or magic bullet and pulse until dates start to break into small bits. Add peanut butter and pulse a little to blend. Scrape down and add remaining ingredients except chocolate chips. Blend together. At this point the dough will look like crumbs, but when you put some in your hand and press together, it should stick together well. Depending on the moisture of your dates, you may want to add a bit more peanut butter or water if it's too dry and add more oats if it's too wet. Work the chocolate chips in with your hands.
Use a small scoop to make a ball about 1 and 1/2 inches in diameter and form with your hands. You should get 14 balls, you know, unless you're tasting along the way. :) Place on parchment paper and enjoy right away or put in the fridge to firm up or to have later.
