Copycat Starbuck's Turkey Bacon and Cheese Sous Vide Eggs

I love the sous vide eggs at Starbucks so this is my at-home attempt and they are delicious!

Servings 4 people

Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (calls for Gruyere, I used Tex Mex)
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp garlic salt
  • 1/2 tsp hot sauce (optional)
  • 4 slices cooked turkey bacon -halved

Instructions

Place all ingredients except bacon into a blender and blend until smooth. Spray 4 small ramekins with non-stick spray. Place 1/2 slice turkey bacon in the bottom of each. Divide egg mixture among the 4 ramekins. Place other half turkey bacon on top (it will likely sink).

Place ramekins in mivcrowave along with a mug of water. Cook on high for 4 1/2 minutes. Let sit in microwave an additional 2 minutes before removing. Use hot mitts to remove. Use a knife and slide around the egg and turn upside down on a plate. Enjoy!
