Halloween Mummy Paleo Pizzas

Ingredients

  • 1 pkg ground turkey or chicken (454 grams)
  • 1 small grated onion
  • 1 garlic clove minced
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 2 tbsp kraft parmesan cheese
  • pinch chili flakes (optional)
  • 1/4 cup blended spinach (about 1 cup fresh)
  • 1/3 cup tomato sauce
  • 1/2 tsp each of basil, onion powder, garlic powder
  • 1 tsp oregano
  • 8 mozza strings, separated in strings
  • 1 large tomato sliced (beefsteak)
  • 4-5 each of green and black or kalamata pitted olives

Instructions

  1. Preheat oven to 350F.

  2. Put turkey/chicken, onion, garlic, salt and pepper, parmesan cheese, and chili flakes in a mixing bowl.

  3. Put spinach and egg in a magic bullet or blender and mix into a pesto like consistency. 

  4. Add spinach to the mixing bowl.  Mix together with your hands and form 8 balls. Place each ball on cookie sheet covered with parchment paper and squish flat with your fingers to about 1cm thick or 1/3 inch thick.

  5. Bake in oven for 15 minutes. Remove from oven and let cool to the touch.

  6. Add 1 tbsp pizza sauce to each patty. Place one thinly sliced tomato on top.

  7. For the eyes, slice in circles and layer the green olives and black olives on the upper half of the tomato. Make strings with the string cheese and arrange on pizzas like a mummy. Copy the picture! Remember as the cheese melts, it spreads, so leave spaces between cheese strings for a more authentic looking mummy!

  8. Turn oven to 400F and put back in the oven for 8-10 minutes until the cheese melts and slightly browned on the edges – like real pizza!  Keep an eye on it, it bakes quickly!

    Serve immediately or eat the next day cold – again, just like cold pizza!
