Lemon Walnut Crusted Salmon

A finely chopped walnut lemon topping baked on salmon

Ingredients

  • 1 cup raw walnuts chopped
  • 1/4 tsp salt
  • 3/4 tsp lemon zest
  • 2 tbsp dill or fresh dill chopped
  • 1 tbsp olive oil
  • 1-2 tbsp Dijon mustard
  • 500 grams salmon fillet
  • lemon wedges

Instructions

  1. Blend walnuts until finely chopped (so walnuts are about the size of peppercorns or smaller. Add olive oil, lemon zest, dill and salt and mix well. Mixture should be slightly crumbly, not pasty. Of course, if you blend too long, it will still work, but a crumbly texture is preferred.

  2. Cut salmon into 1.5-2 inch strips. Place on a parchment paper lined pan. Spread Dijon mustard on salmon strips with a butter knife.

  3. Spoon walnut mixture onto each salmon piece and gently spread mixture to cover the top of each piece.

  4. In preheated oven of 350F, bake salmon for 20 minutes. If you like the top a bit crunchier, place under broiler for a touch. Be sure to watch salmon closely when doing this, you don't want your masterpiece to burn. Serve with a lemon wedge. Enjoy this delicious salmon recipe!
