Fresh, crisp, summer salad
Combine the garlic, ginger, pepper flakes, honey, lime juice, soya sauce and olive oil in a small saucepan. Heat through briefly and remove from heat to let cool. This will be the dressing for the salad.
For crisp, crunchy lettuce, I chop the lettuce in bite size pieces and place lettuce in an ice cold water bath. Let lettuce sit in the water for at least 5-10 minutes. Drain water and spin lettuce and then you will have crisp, crunchy lettuce.
Meanwhile, place all other ingredients in a bowl and toss with dressing. (A sprinkling of feta cheese would be a nice addition too! )
