Mediterranean Bean Salad with Chicken Meal Prep Bowls

Ingredients

  • 1 can mixed beans 540ml
  • 1 red pepper, chopped
  • 1/2 red onion, sliced
  • 1 small zucchini, chopped
  • 1/2 cup green or black olives
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, sliced in 1/2
  • 1/2 cup peperocini peppers, sliced
  • handful chopped cilantro or basil
  • 4 cooked chicken breasts (4 ounces each)

Dressing

  • 1/4 cup olive oil
  • 4 tbsp red wine vinegar
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 garlic clove, crushed
  • salt and pepper to taste

Instructions

  1. In a large bowl, add the can of beans (drained and rinsed), red pepper, red onion, zucchini, olives, feta cheese, cherry tomatoes, peperoncini, cilantro.

  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, herbs, salt and pepper.

  3. Add dressing into the salad and combine well. Serve with grilled chicken.
