Mexican Bowl

Ingredients

  • 3 chicken breasts chopped
  • 1 c brown basmati rice cooked
  • 2 c frozen peaches and cream corn thawed
  • 1 can black beans rinsed
  • 1/2 english cucumber diced
  • 2 tomatoes chopped
  • 1 bell pepper chopped
  • 1/2 small red onion chopped
  • 1 bunch fresh cilantro chopped
  • 2/3 c extra virgin olive oil
  • 1/4 c apple cider vinegar or balsamic
  • 1 tsp grainy dijon mustard
  • 2 garlic clove
  • salt and pepper to taste

Instructions

Cook chicken in a skillet and add 1 garlic clove and salt and pepper to taste. Cook rice according to directions. Chop up all ingredients and place separately in bowls or one large container. Combine olive oil, vinegar, mustard, 1 garlic clove and salt and pepper together in a blender to make the dressing. Compile your salad however you like it and drizzle with a tbps of dressing.
