A moist, pumpkin spice muffin low in sugar and no flour.
Preheat oven to 375 F.
Line muffin tin with muffin liners or spray each cup so muffins won’t stick to pan when baked.
Mix wet ingredients together and set aside (the first 7 ingredients).
Mix together dry ingredients except for water and baking soda.
Mix together water and baking soda in small dish and add it to the wet ingredients. Mix together.
Gently mix together wet and dry ingredients. I use a spatula.
Scoop mixture evenly into 12 muffin liners. Bake muffins for 18-20 minutes. Insert a toothpick to check for doneness. If toothpick comes out clean, they're done cooking. If it doesn't come out clean, cook a minute or two more as needed.
