Pumpkin Spice Muffins

A moist, pumpkin spice muffin low in sugar and no flour.

Ingredients

Pumpkin Spice Muffins

  • 1 cup pumpkin pure
  • 1/2 cup unsweetened apple sauce
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/2 cup plain greek yogurt 0%mf
  • 1 tsp vanilla
  • 1/3 cup maple syrup (you could even use 1/4 cup)
  • 1 1/2 cup oat flour
  • 1 cup almond flour
  • 1 tbsp ground flax seed
  • 1 tsp baking powder
  • 2 tsp pumpkin spice mix (see below for pumpkin spice recipe)
  • 1/2 tsp salt
  • 1 tbsp hot water
  • 1/2 tsp baking soda

Pumpkin Spice Mix Recipe

  • 4 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp ground cloves
  • Mix together spices. Makes 7 teaspoons.

Instructions

  1. Preheat oven to 375 F.

  2. Line muffin tin with muffin liners or spray each cup so muffins won’t stick to pan when baked.

  3. Mix wet ingredients together and set aside (the first 7 ingredients).

  4. Mix together dry ingredients except for water and baking soda.

  5. Mix together water and baking soda in small dish and add it to the wet ingredients. Mix together.

  6. Gently mix together wet and dry ingredients.  I use a spatula.

  7. Scoop mixture evenly into 12 muffin liners. Bake muffins for 18-20 minutes. Insert a toothpick to check for doneness. If toothpick comes out clean, they're done cooking. If it doesn't come out clean, cook a minute or two more as needed.
