Roasted Cauliflower Bites with Garlic Mayo

Healthier, lower calorie version of the popular cauliflower bites recipe! A good replacement for buffalo chicken wings!

Ingredients

  • 1 head cauliflower cut in florets
  • 1/4 cup buffalo hot sauce
  • 2 tbsp coconut oil
  • 1/4 cup panko crumbs I used whole wheat panko
  • 1/8 cup parmesan cheese
  • 1/8 cup nutritional yeast
  • 1/4 tsp paprika
  • 1/2 tsp garlic salt

Garlic Mayo

  • 1/4 cup reduced fat mayonnaise
  • 1/4 cup plain greek yogurt
  • 1 tsp lime juice
  • 1 tsp buffalo hot sauce
  • 1/2 tsp garlic salt
  • 1/2 tsp maple syrup

Instructions

  1. Cut cauliflower into bite size florets, wash and pat dry. 

  2. Melt coconut oil, add hot sauce and mix together. Toss this mixture with the cauliflower in a large bowl. Coat evenly.

  3. Mix panko, nutritional yeast, parmesan and spices together and sprinkle on cauliflower – toss to distribute evenly.

  4. Put cauliflower mixture on a cookie sheet. I usually line the pan with parchment paper for easy cleanup. In a preheated oven of 425F, bake cauliflower for 20-25min.  To amp up the crunch, after the cauliflower is baked, put oven on broil for a couple of seconds – watch carefully, you don’t want it to burn.

  5. Serve on a platter with garlic mayo and celery sticks.

  1. Mix garlic mayo ingredients together with a spatula and scoop into serving bowl.
