Tuscan Baked Salmon

Easy, quick, delicious take on Salmon with a Tuscan flair.

Ingredients

  • salmon fillet, skinless
  • 1-2 cup cherry tomatoes, cut in 4
  • 1-2 onions red, white or cooking onion
  • 1-2 peppers chopped red, yellow and/or orange
  • 1/2-3/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1/4-1/2 cup fresh basil finely chopped
  • 1 tbsp dried basil
  • salt and pepper to taste

Instructions

  1. You'll notice a lot of the ingredients are not exact. That's because it's not really an exact science with this recipe. These are basically the amounts needed. A little more of something and a little less of something else is okay - it will basically turn out the same. You can't go wrong - it will be good!

  2. Chop veggies in small bite size pieces. Pan fry onion and peppers until tender. Put in a 10X20 pan. Add chopped tomatoes, basil, salt and pepper and feta cheese to the pan. Drizzle 1 tbsp olive oil on the veggies and cheese, add salt and pepper and fresh basil and mix thoroughly.

  3. Lay salmon fillet on top of the veggies. Spread the other tablespoon of oil on top of the salmon. Sprinkle salt and pepper and basil on top. (Basil can be fresh or dried. Fresh is best, just like the food company says!)

  4. Bake in a preheated oven of 400F for 20-25 minutes; this depends on the size of your fillet. Basically cook through until salmon is no longer a dark pink inside and it feels firm to the touch.

  5. This dish goes well with cauliflower rice. Definitely scoop the veggies on top! Enjoy movers!
