Vanilla Latte Protein Balls

Ingredients

  • 2/3 cup almond meal
  • 1/8 cup pumpkin seeds I did one quick pulse in my magic bullet to make these slightly smaller
  • 1/8 cup sunflower seeds
  • 1/2 cup all natural nut butter I used crunchy peanut butter
  • 1 tbsp ground coffee You can use instant if you wish. I used regular ground coffee.
  • 1/8-1/4 cup honey or maple syrup
  • 1 tsp vanilla
  • 1/3 cup vanilla protein powder
  • 1/4 cup mini chocolate chips

Instructions

  1. In a bowl, combine all ingredients. Stir until well combined. I get in there with my hands. Roll into 16 small balls.

  2. Place on parchment lined cookie sheet and put them in the freezer for 1 hour to harden.

  3. Place them all in an airtight container and store in the freezer for up to 3 months.
