An excellent substitution for Mashed Potatoes
I always steam my vegetables as this process maintains more nutrients than boiling. So, steam cauliflower to desired tenderness. This doesn't take too long, certainly not as long as potatoes. It should take about 8 minutes. Test with a fork. The fork should easily pierce the cauliflower.
Strain the cauliflower and place in a big bowl for whipping. Reserve some of the water you used to steam the cauliflower with and set aside.
Add spices, butter, garlic and Boursin to the cauliflower. Mash with a masher and then using an emulsion blender, whip cauliflower till smooth. If more liquid is needed, add a little of your reserved steamed water. You won't need much. If you don't have an emulsion blender, try using a hand blender. That should also work, it just won't be as smooth.
Scoop whipped cauliflower into a bowl and sprinkle parsley on top. Whipped cauliflower is delicious in soups and stews. We recommend adding 2-3 cups of whipped cauliflower to our Sweet Potato Stew. Enjoy friends!
