As a child, my summer memories were synonymous with trips to Dairy Queen, indulging in the timeless delight of a Dilly Bar. As my palate evolved, I graduated to the irresistible allure of the Buster bar, with its harmonious blend of chocolate, peanuts, and creamy ice cream—a true embodiment of the season.
Today, while my focus lies on health and nutrition, the desire for those nostalgic summer treats remains strong. Thankfully, I’ve discovered a healthy rendition of this classic, allowing me to satisfy my cravings while staying on track towards my wellness goals. These are so good!
Creamy Peanut Buster Bar
Ingredients
Creamy yogurt filling
- 1 cup Greek yogurt I used 2% mf, plain
- 1 tsp maple syrup leave this out if using sweetened yogurt
- 2 tbsp vanilla protein powder
- 2 tbsp mini chocolate chips
- 1/2 cup all natural peanut butter runny is easiest to stir
Chocolate coating
- 1 cup dark chocolate melted
- 2 tbsp salted peanuts
- 2 tbsp coconut oil
Instructions

Mix together all of the ingredients in the creamy yogurt filling. Use runny peanut butter to make it easier to mix.

Put parchment paper on a cookie sheet, and then divide your yogurt evenly into 4 piles. (Next time, I would make 5 so that they aren't as big)

Divide the 2 tbsp of peanuts evenly over the yogurt and press them in.

Add your popsicle stick into each one and place in freezer for 2 hours.

Melt chocolate and coconut oil together.

Once the yogurt has frozen, dip them into the chocolate and place back in freezer for 10 minutes to solidify.
Next time, I would also just coat the front. I felt like it was too much chocolate for front and back.
