Have you ever tried overnight oats?  Because if you haven’t, you definitely should. So I hate to admit this, but I had never tried them until Tracy asked me to make some fall inspired overnight oats and boy, was I surprised at how delicious they are!  For this recipe, we decided to do a cinnamon/apple topping on the overnight oats to go with the fall theme.  There’s nothing better than those rich cinnamon spices and apples to help you get into the fall mood. Adding a dollop of Greek yogurt to your Cinnamon Apple Overnight Oats will increase your protein as well.

Start with your fresh fall apples.  Peel, core and dice the apples to the desired size.  Put the apple topping ingredients in a medium sized pot, stir and cook on medium/low heat.  Don’t forget to stir.

Did you know that apples are a good source of vitamin C, fibre and antioxidants. They are also quite filling when you consider their low calorie count.  Remember the ol’ saying, “an apple a day, keeps the doctor away“?

Well after reading about how good apples are for you, it makes sense!  With high level of soluble fibre pectin, apples can lower blood pressure, glucose levels and bad cholesterol and they can help maintain the health of the digestive system.  Of course, it’s always good to add a protein to your apple to help keep the sugars in it from spiking your insulin, so I will definitely be adding some nut butter or Greek yogurt to my apple a day!  In this recipe we are adding greek yogurt, almond milk and protein powder; good sources of protein, so we are good to go.

As the apples cook, they will cook down a bit and the water will reduce.  Be sure to stir every couple of minutes.  I cover the apples with a lid for the first 10 minutes of cooking.  I mashed and cooked the apples another 5 minutes without a lid because I like my apples softer and less chunky.  Feel free to cook your apples to your desired tenderness and size.

While the apples cook, prepare the overnight oats. Simply put all the dry ingredients in a bowl and stir.  Then add the wet ingredients and blend well together by stirring.  Once you’ve done this, you can add the oats to the containers you are going to make your Cinnamon Apple Overnight Oats in.  I used mason jars and that worked perfectly.  This recipe makes 6-8 servings.  If there is just 1-2 people eating this, I would half the recipe.  In fact, I will include the smaller recipe in this post to make dividing it easier for you.

Once the apple topping is finished and cooled, simply add a scoop to each overnight oats.  Put in fridge overnight and serve for breakfast in the morning!

Cinnamon Apple Overnight Oats

Ingredients

Apple Topping

  • 4 apples, peeled, cored and chopped
  • 1/2 cup water
  • pinch of salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp vanilla

Overnight Oats

  • 3 cups large flake oats
  • 4 tbsp chia seeds
  • 1/2 cup protein powder
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 1 tbsp maple syrup
  • pinch of salt
  • 1 cup plain greek yogurt
  • 3 cups unsweetened almond milk*

Cinnamon Apple Overnight Oats Instructions - Serves 6-8

Apple Topping Instructions

  1. Peel, core and chop apples.  Place in a pot.  Add water, spices and stir. 

  2. Place pot on stove at medium-low heat covered for 10 minutes, stirring occasionally. Cook until desired texture.  I like my apples softer and less chunky, so I mashed the apples with a masher after about 10 minutes of cooking and then let it cook another 5 minutes uncovered for a total of 15 minutes. Remove from heat and let cool.

Overnight Oats Instructions

  1. Combine the first four ingredients of the Overnight Oats (dry ingredients) in a large bowl and stir.

  2. Add the remaining Overnight Oats ingredients and mix together well.

  3. Distribute the Overnight Oats mixture evenly in dishes.  This recipe makes 8 servings. Cut the entire recipe in half for 4 servings!

  4. Evenly distribute the apple filling on top of each oatmeal jar.

  5. Cover and place in fridge overnight. Cinnamon Apple Overnight Oats are ready to serve for breakfast the next morning.

  6. *You can use unsweetened vanilla almond milk if desired.

2 apples peeled, cored and chopped
