Seafood…are you a fan?

 

Maybe you should be.  Seafood is often polarizing for some people, like our sister, Jackie, who never eats it and doesn’t even want to try it!  Yet there are a lot of benefits to some seafood, like salmon, for example.

 

Salmon, renowned for its omega-3 fatty acids, boasts a multitude of health benefits, including cardiovascular support, anti-inflammatory properties, and cognitive enhancement. Not to be outdone, its counterparts in the sea—tuna, mackerel, and sardines—also pack a punch with their omega-3 content, bolstering overall well-being.

 

Choosing a diversity in your foods, including your seafood choices not only cultivates a well-rounded diet but also tantalizes taste buds. So, whether you’re already a seafood enthusiast or on the fence, consider taking the plunge. Much like acquiring a taste for olives, sometimes culinary adventures require a few attempts before finding your palate’s delight—just ask my once-olive-averse sister turned enthusiast!

 

This recipe is simple yet delicious and it pairs well with a crisp green salad and perhaps a side of cauliflower rice. Bon appétit!

Lemon Walnut Crusted Salmon

Ingredients

  • 1 cup raw walnuts chopped
  • 1/4 tsp salt
  • 3/4 tsp lemon zest
  • 2 tbsp dill or fresh dill chopped
  • 1 tbsp olive oil
  • 1-2 tbsp Dijon mustard
  • 500 grams salmon fillet
  • lemon wedges

Instructions

  1. Blend walnuts until finely chopped (so walnuts are about the size of peppercorns or smaller. Add olive oil, lemon zest, dill and salt and mix well. Mixture should be slightly crumbly, not pasty. Of course, if you blend too long, it will still work, but a crumbly texture is preferred.

  2. Cut salmon into 1.5-2 inch strips. Place on a parchment paper lined pan. Spread Dijon mustard on salmon strips with a butter knife.

  3. Spoon walnut mixture onto each salmon piece and gently spread mixture to cover the top of each piece.

  4. In preheated oven of 350F, bake salmon for 20 minutes. If you like the top a bit crunchier, place under broiler for a touch. Be sure to watch salmon closely when doing this, you don't want your masterpiece to burn. Serve with a lemon wedge. Enjoy this delicious salmon recipe!
