Nothing says summer like a Pina Colada!!
Ahh, that perfect summertime flavor. Don’t you remember going to a nice restaurant as a kid, and your choice of virgin mocktails consisted of a Shirley Temple, Roy Rogers or the Pina Colada, which was always my pick, hands down.
As soon as I was done making this, I took it upstairs to my daughter and her friend and the minute they tasted it, they said, “Mmmm, it tastes like a Pina Colada!” So there you go…if you loved that drink, you’re going to LOVE this dessert!
This is the easiest thing you’ll make this summer:
Recipe:
- 1 can cold coconut milk
- 1/2 fresh pineapple cut in cubes and frozen
- 1 tbsp honey (optional, taste pineapple for sweetness, if it’s sweet enough, leave it out)
Blend together in a Ninja Blender.
Serve immediately with fresh pineapple wedges or freeze.
