Sometimes it’s all about the ambiance. My mom always orders a Bellini every time we go out because it always comes in a fancy martini glass. She rarely finishes it, but she orders it…because of the fancy glass! When a dish looks cute, adorable, fancy, or fun, we just want to eat it! That’s how I feel about these cute, little chia puddings in baby mason jars. They are adorable. Better yet, they are healthy AND adorable, so eat away!
This would make an easy make ahead breakfast for the holiday season, or it would be a tasty addition to your Christmas brunch table. Just make sure you buy the tiniest jars. A little goes a long way!
Bananas Foster Chia Pudding
Ingredients
- 1/2 cup chia seeds
- 2 cups almond milk or coconut milk I have used both. Almond is lighter, coconut is quite rich.
- 2 tbsp maple syrup
- 1 tsp vanilla
- pinch salt
- 1 banana
- 1 tsp butter
- 1/4 cup chopped walnuts or pecans
- sprinkle cinnamon
- 1 cup vanilla Greek yogurt
Instructions

Make the chia pudding the night before by combining chia seeds, almond or coconut milk, maple syrup, vanilla and salt in a bowl. Stir well and let sit overnight.

In the jars, layer chia pudding and greek yogurt.

In a pan over medium heat, place butter until melted and slice banana on top. Sprinkle with cinnamon and let sit until they start to brown. Flip and brown the other side.

Top pudding jars with a dollop of Greek yogurt, walnuts and caramelized bananas!
