This Pumpkin Spice Loaf is amazing!  It’s probably the most moist loaf I have tasted!  The combination of the almond flour and oat flour creates a slight nutty taste and texture which is surprisingly delish.

As in most muffin or loaf recipes, combine the wet ingredients together and the dry ingredients together in separate bowls.  Once each is combined, gently blend the wet and dry together.  Don’t overmix.

I like to line my loaf pan with parchment paper – it makes baking so much easier and cleaner!  Pour the pumpkin mixture into the loaf pan.  It should be quite full.  Sprinkle some raw pumpkin seeds on top along the centre.

Place in middle of the oven or even the lower rack if your element is on top.  If loaf is browning too much on top, put a sheet of tinfoil on top.  Bake for 45-50 minutes.  Let loaf cool down a bit before removing it from the pan.  Let loaf cool completely before slicing.  Enjoy with a cup of chai tea or coffee and get some Fall spirit!

 

Pumpkin Spice Loaf

A deliciously moist Pumpkin Spice Loaf!

Ingredients

  • 1 3/4 cup large flake oats blended into oat flour texture
  • 1 1/2 cups almond flour
  • 2 tsp baking power
  • 1 tsp baking soda
  • 1 tsp kosher salt flakes
  • 2 1/2 tbsp pumpkin spice
  • 3 eggs
  • 1/2 cup unsweetened apple sauce (one lunch pack size)
  • 1 cup pure pumpkin puree
  • 1/3 cup maple syrup
  • 2 tbsp honey (try cinnamon honey)
  • 1/4 cup melted coconut oil
  • 1 tbsp vanilla
  • pumpkin seeds

Instructions

  1. Preheat oven to 375F.

  2. Stir together oats, almond flour, baking powder, baking soda, salt and pumpkin spice in a bowl. This is the dry mixture.

  3. In another bowl, mix together remaining ingredients, except the pumpkin seeds.  This is the wet mixture.

  4. Finally, mix dry and wet mixtures together until blended.

  5. I usually line my bakeware with parchment paper, which works very well.  Pour blended mixture into a loaf pan that is lined with parchment paper or greased with oil/butter and floured.

    Sprinkle the top with pumpkin seeds.

  6. Bake in the middle of the oven for 45-50 min.  Toothpick should come out clean when inserted to test for doneness. Cook a little longer if not quite done.

    Let cool completely before slicing.
