Out with the old and in with the new!  This whipped cauliflower is a much healthier and a lower calorie dish than the alternative, mashed potatoes.  In fact, the caloric count for 1 cup of potatoes is 116 calories.  The caloric count for cauliflower is a measly 27 calories.  By this stat alone, you can see how much better the cauliflower option is.  And get this, whipped cauliflower tastes VERY much like mashed potatoes.  If you don’t believe me, start out with just half cauliflower and half potatoes and make mashed potato cauliflower.  But don’t tell anyone.  I can pretty much guarantee they won’t know the difference.  Even subtle changes like this can help your daily caloric intake!  That’s how I started. I did the half and half thing and it tasted like mashed potatoes.  Then one day, I decided to try full on mashed cauliflower and it was delicious.

One thing about whipping cauliflower, you don’t have to worry about over-whipping it because it won’t turn to paste like potatoes can…and yet another reason to try whipped cauliflower!

I also highly recommend putting your leftover whipped cauliflower in soups or stews.  I recently added it to the Sweet Potato Stew that Move Daily just posted.  It made the stew creamier, thicker and more delicious.  Here’s a picture of the combination.

Whipped Cauliflower

An excellent substitution for Mashed Potatoes

Ingredients

  • 1 large head of cauliflower, chopped in flowerets
  • 1/8 cup butter Or try adding almond milk for lower calorie.
  • reserved water from steamed cauliflower
  • 1/2 container boursin garlic and herb cheese Optional. Eliminate for lower calorie.
  • 1 garlic clove, crushed
  • salt and pepper to taste
  • fresh parsley chopped or dried parsley

Instructions

  1. I always steam my vegetables as this process maintains more nutrients than boiling. So, steam cauliflower to desired tenderness. This doesn't take too long, certainly not as long as potatoes. It should take about 8 minutes. Test with a fork. The fork should easily pierce the cauliflower.

  2. Strain the cauliflower and place in a big bowl for whipping. Reserve some of the water you used to steam the cauliflower with and set aside.

  3. Add spices, butter, garlic and Boursin to the cauliflower. Mash with a masher and then using an emulsion blender, whip cauliflower till smooth. If more liquid is needed, add a little of your reserved steamed water. You won't need much. If you don't have an emulsion blender, try using a hand blender. That should also work, it just won't be as smooth.

  4. Scoop whipped cauliflower into a bowl and sprinkle parsley on top. Whipped cauliflower is delicious in soups and stews. We recommend adding 2-3 cups of whipped cauliflower to our Sweet Potato Stew. Enjoy friends!
