Something fresh, light and delicious!  Chicken lettuce wraps are a great meal choice.  Chalk full of veggies and ground chicken or turkey, this is a meal pleaser!  Oh and did I mention easy to make?!  One pan stir fry with sauce and that’s it.

Chop all your veggies.  This recipe has ground chicken or turkey (I actually prefer turkey) with onion, red pepper, grated carrots, cilantro and water chestnuts for a good crunch. You could even throw in some mushrooms and green onion if you wanted to!

Then basically everything goes into the frying pan.  Cook through and stir in the homemade Hoisin Sauce!  Scoop onto butter lettuce or crisp iceberg lettuce and you’re all set.

Ingredients

  • 1 pkg ground chicken or turkey
  • 1 head iceberg or butter lettuce
  • 3 medium grated carrots
  • 1 red pepper finely chopped
  • 1 medium onion finely chopped
  • 1/2 cup fresh cilantro chopped
  • 1 227ml tin sliced water chestnuts chopped fine
  • 4 mushrooms chopped fine optional
  • 1/4 cup green onion chopped fine optional
  • 2 garlic cloves crushed
  • 1 tbsp fresh grated ginger
  • pepper to taste

Hoisin Sauce

  • 3 tbsp black bean sauce
  • 3 tbsp hot water
  • 1 tbsp soya sauce
  • 1 tbsp honey optional
  • 1 tsp chinese 5 spice
  • 2 tbsp raisins
  • 1 tsp sesame oil
  • 1 tbsp natural peanut butter
  • 1 garlic clove

Instructions

  1. For the lettuce wraps, brown ground chicken/turkey in a frying pan. Once it's halfway cooked start adding the veggies. Start with onion, then add pepper. If using mushrooms, finely chop 4 mushrooms and add with the onion. Cook for a couple more minutes. Once the chicken/turkey is fully cooked, add grated carrots. Add garlic and ginger. Cook another couple of minutes. Lastly, add the water chestnuts and cilantro. Green onion can also be added. Cook for two more minutes.

To make hoisin sauce: Put hot water in a dish and add raisins. Let soak for 10 minutes.

While that's soaking, add the rest of the hoisin ingredients into a magic bullet or blender. Add the water and raisins and blend well.

Add most of the sauce to chicken/turkey mixture. Mix well. Add the rest of the sauce if needed. You don't want too much sauce. You can always add a little to each wrap if desired.

Separate lettuce pieces and scoop mixture into each lettuce cup. Chicken wraps are ready to go. Sprinkle some toasted sesame seeds on top for added flavor and to make the wraps look good!

Mmm-mm!
