Ok, let me just say, this is so worth making! No sugar, no dairy and no flour dessert bites that taste amazing! I’ve even had my kids and friends test these and eveyone thought they were delicious. When you find something this good, you just need to make it.
It’s a simple 3 part recipe. Start with the base. Almond flour, honey and coconut oil make up the bottom layer. Mix together the bottom layer ingredients and place in the bottom of a square 8 x 8 pan. Press firmly and evenly. This part is baked. When finished baking, let cool.
The next part is the middle where the ingredients are mixed and heated through on the stove in a small saucepan. Bring to a boil on medium heat and remove from heat when it starts to boil. I really like peanut butter, so I used only peanut butter for the middle part, but you could use half peanut butter and half almond butter or just all almond butter. Let it cool for a bit and then spread evenly on top of the base. Let these two layers set hard in the freezer. Once it is set hard, it’s time to dip the bites into the chocolate sauce.
Mix the chocolate ingredients together in a narrow, deep dish as you will be dipping the bites into the chocolate to fully cover them.
Once dipped and set (place in the fridge to set), cut excess chocolate to “square up” the chocolate bites! Now sit back and enjoy – don’t you deserve just one bite?!
Chocolate Peanut Butter Almond Bites
The most delicious no sugar, no dairy, no flour peanut butter, almond, chocolate covered dessert bars.
Ingredients
Base
- 1 1/3 cup almond flour
- 1/3 cup coconut oil
- 1/8 tsp kosher salt
- 2 tbsp honey
- 1 tsp vanilla
Middle
- 1 cup Kraft Only Peanuts and Sea Salt Peanut Butter
- 1/4 cup maple syrup
- 3 tbsp coconut oil
- 1 tsp vanilla
Chocolate Coating
- 6 oz dark chocolate chips sweetened with stevia Lily's
- 4 squares Dark Baker's Chocolate
- 1/4 cup coconut oil
- 1/8 cup cacao powder
Instructions
Base Method

Preheat oven to 350F. Mix first 5 ingredients together and press into an 8 X 8 pan that is lined with parchment paper. Bake for 12 minutes.
Middle Method

Mix the middle ingredients together in a small pot. Blend together well and heat through. Bring to a soft boil for a minute on medium/low heat. Remove from heat and spread onto the cooked base layer.

Place pan in freezer for an hour.
Chocolate Coating Method

Melt chocolate ingredients together in microwave. Stir together and let cool a bit before coating the bites.

When base and middle have been in the freezer for an hour, cut into 1 inch squares. Dip squares in melted chocolate and let set on a piece of parchment paper in the fridge. Sprinkle a little bit of flaked salt on top.

OR
Simply spread the chocolate on top of the middle part and let set. This method has less chocolate waste (which is very important! 😉 Sprinkle a little flaked salt on top or pink Himalayan salt. Less is better. You can always add more, but you can’t take it off! Let finish setting in fridge. Once set, cut in squares.
