Anytime I strap on the ol’ apron and start baking, my kids have one question…is it healthy? NOT because they want the healthier option…heaven forbid! No, it’s because I have “fooled” them one too many times with my black bean brownies and my almond meal, sugar-free cookies. So, I suppose I can’t blame them for their reluctance in trying my next plate of treats!
THESE however, were unreal.
They have a crunchy texture, just like a real Butterfingers. You can make them even healthier by swapping Xylitol for the 3 tbsp of sugar, and coconut oil mixed with cocoa powder for the chocolate chips. I told my oldest son Stratton, to try one. I may have also said a tiny fib that they weren’t even healthy ones this time. After he swallowed I asked him what he thought. He gave two thumbs up and then I couldn’t resist laughing at him and proudly toting that the ingredient that gave it that crunch was Bran Flakes! He rolled his eyes and had another.
Ahhh kids, so easy to fool.
So if you’re looking for a healthier version of a Halloween treat this season, give these a try. Remember, they are still a treat. Try cutting them into small bite -size squares and storing them in the freezer.
Recipe:
1/4 cup honey
1 tbsp molasses
3 tbsp sugar or Xylitol
1 cup all-natural peanut butter
1 1/2 cups Bran Flakes
1/8 tsp salt
2/3 cup dark chocolate chips (OR 1/4 cup coconut oil and 1/4 cup cocoa powder, melted and mixed together)
Mix the honey, molasses and sugar in a small pot over medium heat. Bring to a boil and boil for 1 minute, stirring constantly. Remove from heat and add the peanut butter and salt, stir until blended. Next add Bran Flakes and stir until combined. Press into an 8×8 non-stick pan or line with parchment paper. While the mixture is still warm, pour chocolate chips evenly on top. Wait 3-4 minutes and once they are melted, smooth over the bars with a spatula. Alternately you could add your coconut oil/cocoa power mixture here instead. Let set in refrigerator for an hour. remove, cut into squares and freeze in a ziplock bag.
