So, the sweet tooth has been rather sweet lately. Sometimes I just need, need, need. This little gem of a recipe helps curb that and is only sweetened by the naturally occurring sugar in the dates and coconut. These are fabulous wrapped individually and stored in the freezer for an easy grab and go. I added whey protein powder and all natural peanut butter to the original recipe to up the protein content. They are mighty fine I would say!
Recipe:
1 1/2 c. softened dates (soak in hot water to soften)
2/3 cup almond meal
1 cup dried unsweetened coconut
1 tsp vanilla
Juice and zest from 1 lemon
1/2 tsp sea salt
1/2 c. all natural peanut or almond butter
2 scoops vanilla protein powder
In a food processor, combine softened dates, vanilla, salt, lemon juice and zest, peanut butter until blended. Then with a spatula, mix in coconut, almond meal, and protein powder until thoroughly combined. If mixture seems too wet, add 1/2 scoop more protein powder.
Pat mixture out on plastic wrap lined sheet to a thin rectangle shape. Cover with plastic wrap and freeze for an hour. Slice into bars, and wrap and store in freezer. These can also be made into balls and stored in the freezer.
