I’m in LOVE with trying out different salad recipes. A salad like this differs from a straight lettuce salad in that if you make a big batch, the ingredients are hearty enough to last up to 3 days in the refrigerator. Plus, this salad has all the makings of a complete and balanced meal by adding quinoa penne, lean turkey sausages and high protein black beans!
One of my tricks in finding delicious new recipes is to go to a local health food market and try some of their salads. I know that our local market in Kelowna, Nature’s Fare, always lists the ingredients on the sales sticker. The quantities of the ingredients I just eyeball until I think it tastes the same. With ingredients like those in this salad, you honestly cannot go wrong!
I have never tried Quinoa Pasta before but I often buy the Black Bean pasta and adore it so I gave this a shot. It was really good. Of course more expensive, but I only used 1 cup of dry noodles as I was adding corn and black beans for additional volume. Just cook according to the directions on the package and rinse with cool water.
Most grocery stores now carry a homemade turkey sausage of sorts so I thought I would stop at our new T-Bones just down the road and see how their sausage tasted. It did not disappoint. Of course you could substitute chicken sausages or even pork or bison. I barbecued up three sausages and let them cool to room temperature before adding them to the salad.
I may not have had the amounts exactly as they did at the store, but I brought this to a dinner party anyway and it received rave reviews! I thought it was amazing.
