Back to school=Back to school snacks and lunches! Ugh!
Haha, well, it doesn’t have to be when you plan ahead and whip up a batch of these Paleo Turkey and Sweet Potato Poppers. My kids loved them and they are a healthy, well-balanced lunch or anytime snack. So, I would definitely make a double batch next time and freeze them for an easy grab and go protein for myself as well.
Recipe:
- 1 pound ground turkey or chicken
- 2 cups shredded sweet potato or yam
- 2 tbsp coconut flour
- 2 tbsp coconut oil melted
- 2 tbsp chives (fresh or dry)
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp sea salt
- 1 tsp chili powder
- 2 tbsp fresh chopped parsley
Instructions:
- Pre-heat oven to 400F, grease a cookie sheet with a little coconut oil.
- Mix all ingredients together and roll into small balls, then slightly flatten with your hand (I got 20).
- Cook for 24-28 minutes, turning half way, and broiling for 1-2 minutes at the end to crisp to tops.
- Serve with homemade guacamole or fire roasted salsa.
