Fall is here, time to pumpkin spice up your life!! Here is a recipe that you can feel good about snacking on! What’s not to love about it? You have pure pumpkin (full of vitamin A,C, and a great source of potassium), oats (high fiber, magnesium and protein) nuts and nut butter ( healthy fat, protein, potassium, magnesium) and dark chocolate (phytochemicals which fight free radicals).
Plus, they are super simple. Mix all ingredients in a bowl, roll into balls and freeze! I grab two as a quick snack mid morning or afternoon with tea.
Pumpkin Energy Balls
Great for an afternoon snack!
Ingredients
- 1.5 cups quick oats uncooked
- 1/2 cup pumpkin puree -unsweetened
- 1/3 cup all natural nut butter
- 1/3 cup maple syrup or honey
- 1 tsp pumpkin pie spice
- 1/4 tsp vanilla
- 1/2 cup chopped nuts
- 1/8 cup cacao nibs
- 1/8 cup dark chocolate chips
- 1/8 cup sunflower or pumpkin seeds
Instructions
Mix all ingredients in a bowl. If mixture is too dry, add almond milk, a tbsp at a time. Roll into 1 inch balls and place on tray. Freeze. Store in freezer until you eat them.
