My sister Dianna visited this past weekend and brought with her a few new ideas for healthy breakfasts! I usually have my go to’s:
- 1 egg and 1 white on a piece of Big Little bread with all natural almond butter
- Protein pancake -egg whites, oats, small piece of banana blended
- Oatmeal with protein powder and nuts
- Greek yogurt with berries
She introduced me to the smoothie bowl. I know they have been around for a while, but I had never made one.
One word: SOLD!
It was delicious. I can see myself making it more in the summertime though and not when it’s -15 because after I ate it, I was freezing!
It was pretty simple too. Just make your typical protein shake, with less liquid and frozen fruit (this gives it an ice cream consistency). I used 1/2 a frozen banana and that really makes it thick!
Then top with crunchy bits of goodness (chia, hemp, granola, nuts, seeds, cacao nibs, fruit). A little goes a long way with this and when I was done, I was full!
Dianna also makes homemade granola. This is way better than the store bought version because there are no preservatives, and you know exactly what is going in it! A little granola on the Greek Yogurt or on top of this smoothie bowl would add great crunch and texture.
Homemade Granola
Dry:
2 cups old-fashioned oats (not quick oats)
1/2 cup nuts (almonds, walnuts)
1/4 cup seeds (pumpkin, sunflower)
1/2 cup dried fruit (craisins, raisins, dates, add after cooking)
Wet:
4 tbsp maple syrup or honey (or mix)
1 tbsp coconut oil
1 tbsp nut butter
1/2 tsp vanilla
pinch salt
Mix all ingredients together until well coated and place on a cookie sheet in a thin layer. Place in a pre-heated 300F oven and bake for 20 minutes, stirring after 10 min (in my oven I did it for 25 min). Cook until lightly golden but do not over cook or it will taste burnt! Let cool, add dried fruit and store in an air tight container. Enjoy!
