Almost any dish can be made with fewer calories or with less unhealthy “stuff”. Take these cauliflower bites for example, at a restaurant they are likely coated in flour and/or a batter of some sort and deep fried.
What starts out as a fresh vegetable that is lower in calories and good for you, has suddenly turned into a greasy mess! Even the simple step of baking instead of deep frying, will set you miles ahead and into a healthier snack!
So, we take out the flour and the deep frying and we cut the mayo with greek yogurt to make our cauliflower bites similar to a restaurant version and they taste great!
Here are some of the products I used to make this dish. I feel that getting the right buffalo sauce is important. If you can get this one, get it. If not, obviously others will work, but I really like this one.

Roasted Cauliflower Bites with Garlic Mayo
Healthier, lower calorie version of the popular cauliflower bites recipe! A good replacement for buffalo chicken wings!
Ingredients
- 1 head cauliflower cut in florets
- 1/4 cup buffalo hot sauce
- 2 tbsp coconut oil
- 1/4 cup panko crumbs I used whole wheat panko
- 1/8 cup parmesan cheese
- 1/8 cup nutritional yeast
- 1/4 tsp paprika
- 1/2 tsp garlic salt
Garlic Mayo
- 1/4 cup reduced fat mayonnaise
- 1/4 cup plain greek yogurt
- 1 tsp lime juice
- 1 tsp buffalo hot sauce
- 1/2 tsp garlic salt
- 1/2 tsp maple syrup
Instructions

Cut cauliflower into bite size florets, wash and pat dry.

Melt coconut oil, add hot sauce and mix together. Toss this mixture with the cauliflower in a large bowl. Coat evenly.

Mix panko, nutritional yeast, parmesan and spices together and sprinkle on cauliflower – toss to distribute evenly.

Put cauliflower mixture on a cookie sheet. I usually line the pan with parchment paper for easy cleanup. In a preheated oven of 425F, bake cauliflower for 20-25min. To amp up the crunch, after the cauliflower is baked, put oven on broil for a couple of seconds – watch carefully, you don’t want it to burn.

Serve on a platter with garlic mayo and celery sticks.
