One of my very favorite summertime activities (yes, it’s -18C here today and I am dreaming of summer) is Sunday brunch, especially when my sister Jackie is hosting! It’s as fancy pants as you can get. European tablecloth, vases of garden flowers, fresh roasted coffee in a French press, Mimosas, tiny salt and pepper shakers at each plate and all delicious homemade food. It’s unreal. Truly.
So when I made these petite jars of homemade strawberry chia jam and chocolate overnight oats, I thought to myself, these are fancy and tasty enough to garner a position on Jackie’s summer brunch table! Plus, they will be perfect for this season’s Valentine’s Day!
Below, I have given you the recipe for the Strawberry Chia Jam, and the Overnight Chocolate Oats. Eat them separate or together, either way they are delicious!
Strawberry Chia Jam
This jam keeps a week in the fridge or 3 months in the freezer.
Ingredients
- 2 cups fresh or frozen strawberries
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- squeeze of lemon juice
Instructions

In a small saucepan over medium heat, place frozen berries. As berries start to breakdown, take a potato masher and mash them up. Remove from heat and add chia seeds, maple syrup and lemon juice.

Pour into glass jars and store in fridge. Use in the Overnight Chocolate Oats recipe!
Overnight Chocolate Oats with Strawberry Chia Jam
Ingredients
- 1/2 cup large flake oats
- 2 tbsp chia seeds
- 1 cup milk, water, almond milk or coconut milk
- pinch of salt
- 1 tbsp maple syrup
- 1 tbsp cocoa powder
Instructions

Mix all ingredients together and store in glass jar overnight in fridge. In the morning, layer the strawberry chia jam and the chocolate oats in 3 small glass jars. Top with a spoonful of Greek yogurt and some chopped roasted almonds, or toasted coconut.
