Mama popped by yesterday with 10 pounds of fresh picked strawberries for me, and I will tell you that they are nothing like the ones you buy in a clamshell from Costco! These are so sweet, and fragile, and always remind me that it is summertime!
I froze a bunch of them because they honestly don’t last too long in the fridge. I decided to use a cups worth on these delicious Summer Strawberry Protein Balls. The rest I turned into my yummy Strawberry Chia Jam!
Summer Strawberry Protein Balls
Ingredients
- 1 cup pitted dates soaked in hot water to soften - 5 minutes
- 1 cup strawberries, sliced
- 1 tbsp chia seeds
- 1/3 cup almond flour I roast my almonds first, then grind in a magic bullet. This adds a nice roasted flavor.
- 1 cup large flake oats
- 1 scoop vanilla protein powder
- 1 cup unsweetened coconut To roll the balls in.
Instructions

Soak dates in hot water. Drain then blend together dates and strawberries until smooth.

Add the chia seeds to this mixture, and let sit at least 5 minutes.

Stir in remaining ingredients (except the coconut). Roll into balls, then into the coconut and place on parchment lined tray.

Place in freezer to firm up. Store in freezer.
