About 30 years ago I was introduced to hummus. Never having grown up with it, I considered it strange especially since my mother-in-law brought it over from the middle east. My husband’s parents lived in Abu Dhabi for 10 years and my MIL learned to cook some of their traditional recipes. Needless to say, I wasn’t impressed the first time I tried hummus, maybe a little closed minded on my part. The second time, I enjoyed it more and well, now I just love it. Sometimes our tastes need time to get accustomed to new foods and when we allow ourselves to push through and have an open mind about change, we can be pleasantly surprised!
This hummus recipe is adapted from my MIL, so it’s pretty authentic considering it comes from Abu Dhabi. It’s delicious and very easy to make. You put the ingredients in a blender, blend it all up and you’re done. Serve with almond or rice crackers or cut up veggies.
You could get a little fancy, and try adding different ingredients to this recipe. For example, you could roast 4-5 cloves of garlic and add that for a roasted garlic hummus. Or you could try roasting a red pepper, peel the skin off and add that to the recipe for roasted pepper hummus. I’ve even added olive tapenade to the top of the hummus and dipped the crackers in that combo. It’s delicious that way.
This is the simple version, but you can always add different toppings as well to dress it up a bit. take a look at this recipe for a special appetizer: Hummus Party Dip Platter
