This recipe is top shelf and I’m not kidding. Not only does it look good, it’s good for you in so many ways, it tastes amazing and it’s so very quick and easy to make! I’m not making this stuff up! My mom introduced us to this recipe. She told me it was so good, but listening to the ingredients, I had my doubts that it was “so good” as she also said. Finally, one day, I was in Costco, and I saw that salmon she told me about and I decided to finally try this amazing dish…I’m so glad I did!
Ok here’s the easy part – 5 main ingredients. Salmon, without the skin, peppers, onions, cherry tomatoes and feta cheese. Then you have your oil and spices, and that’s it! One key spice is basil and even so much better if it’s fresh!
A little bit of chopping and you’re on your way. Now I have made this two ways where the first time I just put everything in the pan and baked it. The baking time is only for about 25 mins so I found the onions and peppers were still a bit crunchy. Now if you like those to be crunchy, then this is the method for you. I however prefer them a little softer, so I simply pan fried on medium heat the peppers and onions ahead of time until tender. Place everything in the pan and bake. After 25 minutes, take out and enjoy already. Really nice with cauliflower rice or zucchini noodles too.
The last time I made this, I added some sundried tomatoes and I used the oil from the sundried tomato jar to spread on the fish. You could add mushrooms to the bake as well if desired. Hope you enjoy it as much as I did!
Tuscan Baked Salmon
Easy, quick, delicious take on Salmon with a Tuscan flair.
Ingredients
- salmon fillet, skinless
- 1-2 cup cherry tomatoes, cut in 4
- 1-2 onions red, white or cooking onion
- 1-2 peppers chopped red, yellow and/or orange
- 1/2-3/4 cup feta cheese crumbled
- 2 tbsp olive oil
- 1/4-1/2 cup fresh basil finely chopped
- 1 tbsp dried basil
- salt and pepper to taste

You'll notice a lot of the ingredients are not exact. That's because it's not really an exact science with this recipe. These are basically the amounts needed. A little more of something and a little less of something else is okay - it will basically turn out the same. You can't go wrong - it will be good!

Chop veggies in small bite size pieces. Pan fry onion and peppers until tender. Put in a 10X20 pan. Add chopped tomatoes, basil, salt and pepper and feta cheese to the pan. Drizzle 1 tbsp olive oil on the veggies and cheese, add salt and pepper and fresh basil and mix thoroughly.

Lay salmon fillet on top of the veggies. Spread the other tablespoon of oil on top of the salmon. Sprinkle salt and pepper and basil on top. (Basil can be fresh or dried. Fresh is best, just like the food company says!)

Bake in a preheated oven of 400F for 20-25 minutes; this depends on the size of your fillet. Basically cook through until salmon is no longer a dark pink inside and it feels firm to the touch.

This dish goes well with cauliflower rice. Definitely scoop the veggies on top! Enjoy movers!
