Feeling like you need a little Italy…without the carbs? Our Tuscan Styled Chicken Sauté might tantalize your taste buds and make you believe you’re in Italy for however long it takes to eat! For me, it wasn’t that long, unfortunately, because my plate was empty in no time. The chicken and sauce in this recipe are simply yum! Try it out for yourself tonight.
First of all, gather your ingredients, most of which you likely have on hand. If you do have a chance to get to the grocery store, I definitely recommend buying real basil – if you can find it this time of year. It adds a lot of flavour to this dish and it makes it look good.
Start with the sausage, chicken and onion. If you like a little more heat, use hot italian sausage, otherwise, mild italian sausage is perfect. I used 2 chicken breasts and a regular cooking onion.
Once the chicken and sausage are cooked and the onions are tender, you’ll be adding the rest of the ingredients. I recommend chopping up the sundried tomatoes as that will spread the strong flavour around better. Also, make sure you get a good kind of coconut milk – it makes a big difference. I really like the Thai Kitchen Coconut milk and be sure to buy the regular, not the lite. Lite coconut milk simply has more water added, so you’re getting less coconut milk per can.
For the cauliflower rice, simply grate cauliflower and cook in the frying pan. You can add a little oil first and some salt and pepper to season the rice.
You can also use a lid to help steam the cauliflower rice to create a softer texture if you wish. Scoop cauliflower rice onto a plate and then add the Tuscan Style Chicken Sauté and serve!
Tuscan Style Chicken Saute with Cauliflower Rice
A yummy Italian inspired chicken sauté!
Ingredients
- 1 Mild Italian sausage sliced Hot Italian is good too
- 2 chopped, cubed chicken breasts
- 1 onion, chopped
- 1 crushed garlic clove
- 3/4 cup chicken broth
- 1 cup coconut milk Use good coconut milk like Thai Kitchen
- 1 1/2 cup chopped spinach
- 1/3 cup chopped sundried tomatoes
- 1/2 cup chopped broccoli
- 1/2 cup sliced cherry tomatoes
- 1 1/2 tbsp dried basil Fresh is better - the same amount chopped fine
- 1/4 cup parmesan cheese Use real grated parmesan
Instructions

Heat frying pan on medium high. Add sliced sausage first as this will add a bit of oil to the pan. Then add chicken and onions. Saute till no longer pink and onions are soft. Add garlic and cook for another minute. Add broccoli and cook for a few more minutes, until broccoli is tender crisp.

Now add chicken broth and coconut milk. Let that heat up, it will take only and few minutes. Add spinach, both tomatoes and basil. Cook for about another 4 minutes or so. When all is cooked, add the parmesan cheese and stir in to melt. Cover and turn off heat. Once the cauliflower is finished, scoop Tuscan Style Chicken Saute onto a bed of cauliflower rice to serve.

Cauliflower Rice. Simply grate desired amount of cauliflower. Add a little olive oil to heated frying pan. Add cauliflower to pan and heat through, turning it every minute or so. It looks good when it has browned somewhat - more like real rice. Add a little seasoning like salt and pepper. Cover with lid for a softer texture. Delicious with Chicken Saute!
