I was in need of some comfort food today and this dish hit the spot. Warm, healthy, protein dense and plant based, and I think we’ve got ourselves a winner here! Plus, it’s a one pot meal which means fewer dishes. Perfect.
Vegetarian Stewed Curried Lentils
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 3 celery sticks, diced
- 1 tbsp tomato paste
- 1 cup dried green lentils, rinsed
- 1 clove garlic
- 5 cups vegetarian stock
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1 tsp fresh grated ginger
- 2 handfuls of fresh spinach
- 1 handful of chopped cilantro
Instructions

In a saucepan over medium heat, add olive oil, onions, carrots and celery. Cook for 5 minutes. Add the turmeric, curry powder, ginger and garlic and cook for another 3 minutes.

Add lentils, vegetarian stock, and tomato paste. Reduce heat to minimum, cover and simmer for 25 minutes.

Finally, add in the cilantro and spinach, and stir until wilted. If the water hasn't absorbed, remove lid and simmer for an additional 5 minutes.
