I love going over to someone else’s house for dinner! We went to hang out with friends last week and she made the most incredible meal, including a salad with chopped dates, beans, peppers, and chicken. I loved it!! It gave me new inspiration for my own meals that week.

It is interesting to see what other people’s “go-to” meals are because it can help us be more creative with our own meal time. And, let’s face it, after 25 years of making meals, my creativity is taxed!

Chili Lime Yams

Ingredients

  • 1 Yam
  • 1 cup chicken stock
  • 1/2 tsp cumin
  • 1/2 tsp chili power
  • 1/2 lime juiced
  • 1 handful chopped cilantro

Instructions

Peel and chop yam into cubes. Place in pan over medium heat and add chicken stock, cumin and chili powder. Bring to a bubble, then reduce heat and cook under just tender. Do not over cook. I did 5-7 min. Take lid off and allow liquid to evaporate. Squeeze lime over and add cilantro.

 

Mexican Bake

Ingredients

  • 1 pound lean ground beef or turkey
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 tin diced tomatoes
  • 1 1/2 cups frozen corn
  • 1 tin black beans
  • 1 handful chopped cilantro
  • 1/2 cup shredded cheddar (optional)
  • fresh salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil

Instructions

Heat oil in a pan and add onions. Cook until soft (3 min). Add meat and brown. Add seasonings and cook 2 minutes. Add tomatoes, beans, corn. Stir and place in a casserole dish. Top with cheese if desired. Heat oven to 350f and bake for 12-15 min. Top with salsa and serve with a nice big salad
