I love going over to someone else’s house for dinner! We went to hang out with friends last week and she made the most incredible meal, including a salad with chopped dates, beans, peppers, and chicken. I loved it!! It gave me new inspiration for my own meals that week.
It is interesting to see what other people’s “go-to” meals are because it can help us be more creative with our own meal time. And, let’s face it, after 25 years of making meals, my creativity is taxed!
In this video I am sharing a few of the regular items I eat in a day. I aim for balance, taste, convenience and health. Watch the video to see What I Eat In A Day, then try some of the recipes below for yourself!
Chili Lime Yams
Ingredients
- 1 Yam
- 1 cup chicken stock

Instructions
Peel and chop yam into cubes. Place in pan over medium heat and add chicken stock, cumin and chili powder. Bring to a bubble, then reduce heat and cook under just tender. Do not over cook. I did 5-7 min. Take lid off and allow liquid to evaporate. Squeeze lime over and add cilantro.
